Crock-Pot Pot Roast
I got home at a reasonable hour last night! It was early
enough to actually exercise and take Murray on a walk, unload the dishwasher,
and do a load of clothes (fun stuff I tell ya!). About the time I finished up,
Eric got home! Yesterday morning, I threw in a pot roast before work, and it
was done by the time I got home. It is one of my favorite childhood meals that
my mom used to make often. It is very filling and so tasty. I mean who doesn’t
like meat and potatoes?!
I tend to buy all of my meat from Costco. I truly find the
best prices there. I especially love their chicken because it comes in a pack
of 8, and each pack is divided up into 2-3 chicken breast. Perfect for feeding
two. I recently found a duo of chuck beef roast and decided to buy it. I froze
one and cooked the other. If you do not have a Costco membership, you should so
get one. I filled up with gas there this morning for $1.70 when the BP by my
house was $1.99. Side note—does anyone else’s Dad call you to tell you gas
prices or just mine? I know a lot of people my age think that they wouldn’t use
it, but I buy all my gas there and all my essentials (toilet paper, paper
towels, dog treats, water bottles, laundry detergent, etc.). Call me a nerd,
but I am all about saving money, and you truly do at Costco. I really am
Elizabeth’s daughter!
Ingredients
1- Chuck pot roast
½ packet of Lipton Onion Soup Mix
1- 10.7z oz. 98% fat free Cream of Mushroom Soup
½ bag of baby carrots
4- Medium size Red New Potatoes
1 can of water (notes below)
Instructions
- Put roast in crockpot.
- Dice potatoes in 1 inch cubes.
- Add Lipton soup mix, cream of mushroom soup, baby carrots and new potatoes.
- Take empty can of mushroom soup and fill it up with water and then add it to the crock pot.
- Cook on low for 8 hours or high for 4 hours.
*Side note—When cooking is done, my crockpot automatically
changes to the keep warm setting after the 8 hours. It is usually done before I
get home and switches to keep warm. I would recommend this if you have to set
it manually.
