Honey Garlic Shrimp

AHH, my first blog post! Welcome!

This was a new recipe for us! I had been seeing it all over Pinterest, so I decided to give it a try! Eric and I have been trying to eat healthier this past week, and this meal was no exception. I got home late last night around 7:30pm and was STARVING, so I decided to use frozen shrimp (Kirkland Signature 21-25) and McCormick cilantro leaves instead of chopping up fresh cilantro and having fresh shrimp. The original recipe called to marinate the shrimp for only 30 minutes, but Eric and I agreed the shrimp would have been more flavorful if it was marinated longer. I served this with Uncle Ben's Brown Rice (boil-in-bag [1]) and 
steamed some Archer Farms broccoli florets in the bag. Side Note- I like my rice to be soft, so I cooked it longer than 10-12 minutes as stated on the box. I usually cook for about 13-15 minutes.

Ingredients
1 pound medium shrimp (thawed, tails off)
2 tablespoons less-sodium soy sauce
2 tablespoons honey
¼ teaspoon cumin
1 tablespoon minced garlic 
1 lime (1/2 in marinade, 1/2 to garnish on top)
1 tablespoon McCormick Cilantro Leaves (Fresh Cilantro- 2 tablespoons)

Instructions
  • Place the shrimp, soy sauce, honey, cumin, garlic, lime juice, dried cilantro leaves in a large resealable bag. Seal the bag and gently toss the contents together to combine them. Marinate in the refrigerator for 1 hour. Side Note- if you are using fresh cilantro, the original recipe did not put it in the marinade but sprinkled it over the cooked shrimp as a garnish
  • Heat a large skillet over medium-high heat. Pour the shrimp and the marinade in the skillet, cooking the shrimp for about 1 minute, then flipping them to cook an additional minute on the other side, until pink.
  • Remove the shrimp from the skillet and continue to cook the marinade for 3-4 minutes until slightly thickened.
  • Pour the thickened sauce through a strainer so not as much minced garlic and cilantro leaves are in the sauce. Put to the side until plating your food.  
  • Place the brown rice, shrimp, and broccoli on a plate. Pour sauce over plate and then squeeze the remaining lime. Serve and enjoy! Happy Eating!
