Girls' Weekend in Buckhead and Peach Cobbler
Hope everyone had a great weekend! Eric and I both went out
of town for the weekend. He headed to Tifton, GA to visit his sweet mama, and I
headed to Atlanta for a girls’ weekend to celebrate a good friend’s birthday. I
feel like I haven’t seen my husband in ages … but I’m looking forward to our
adventure this coming weekend. Sorry this post is a little long, but I thought
I would share everything we did this weekend—hint (shop and ate). If you are
ever wanting to visit the Buckhead area, keep reading … if you’re not, but you
love peach cobbler, keep reading… if neither of those apply to you, we can’t be
friends.
Oh Atlanta, I definitely couldn’t live there because I would
be 400 pounds and broke. So many good restaurants and so much good shopping.
Eric and I visit ATL often for Sunday Funday, but I had never been there for a
girls’ weekend. For anyone that is looking to do a girls’ weekend, Buckhead is
the best area to stay. You can walk to almost everything and if not, Uber is
always there for your convenience.
Friday night, we went to a cool sushi place in Midtown
called O-Ku. It has a rooftop bar on top of the restaurant with an awesome view
of ATL. On Saturday for breakfast, we ate at our hotel and stuffed
ourselves with bacon, fresh fruit and Belgian waffles. Lenox Mall was then
calling our name, and we quickly found out it was tax-free weekend in Georgia.
We were in trouble … big trouble. We decided to leave the mall and eat a late
lunch at Shake Shack—gosh, I love that place. Thank goodness we don’t have one
in Birmingham. I would eat crinkly cheese fries all day, every day!

My cousin Ashley graduates college Tuesday and had a party
in Cummings, GA, so my mom and aunt picked me up and off we went. Side note—I
am going to share this recipe with you when I find out specifics but omg I think
I ate the entire bowl of fruit salad at the party! Now keep in mind, I just ate
cheese fries and a cheeseburger, but it was so good I couldn’t stop eating it.

The girls planned to go to Sweet Water Brewery while I was
at the party. When I returned to the hotel, I knocked on the door to notice the
sleep lines on Mallory’s face … let’s just say they never made it, and I was
jealous they snuck in an afternoon nap! Saturday night, we truly had the
hardest time choosing a restaurant for dinner. You would assume YELP would
help, but I think it made it harder. We finally decided where we were eating
Saturday night by consolidating to a list of 8 restaurants in the Buckhead
area. The Birthday Girl chose King + Duke. We also surprised Mallory with
her sister from Charlotte and were thrilled she could hang out for the night.
King + Duke: awesome restaurant but the atmosphere really made it. After
dinner, we walked over to a street of bars that was apparently the place to be.
Can’t remember the bar we were at but as soon as I saw the popcorn machine, I
grabbed a big ole cup … truly my father’s daughter. So Angry Orchard and
popcorn for the win… yes, I was eating popcorn in a bar! Highlight of the night
was meeting James Taylor and Nick S. from this season of the Bachelorette. They
were really nice!

On Sunday, we had brunch at Southern City Kitchen. Mallory
had chicken and waffles, and I regret not ordering it!! If you go here on a
Sunday, make sure you make reservations. We decided to hit Off 5th
and Nordstrom Rack before we headed home … so glad we did, I really need
another pair of shoes ha!
On the way home, I was craving peaches and if I would have
craved it earlier, I would have made Eric stop in Georgia. So when I got home,
I hit up Publix for some fresh peaches and decided to make a Homemade Peach
Cobbler. While I did make a mistake of putting more peaches in than the recipe
called for, it was still so yummy. I served it with none other than homemade
Bluebell ice cream.
Ingredients
1 teaspoon vanilla
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
2 cups sugar, divided
1/2 cup unsalted butter, melted (about 1 minute in the microwave will do)
1 cup all-purpose flour
1 tablespoon baking powder
1 cup milk
1/4 teaspoon salt
Instructions
- Pre-heat your oven to 375 degrees.
- Pour melted butter in a 13 x 9 inch baking dish.
- In a medium sized bowl sift together 1 cup all-purpose flour, 1 cup sugar (reserve the other cup for the peaches), 1 tablespoon baking powder, and 1/4 teaspoon salt. Add in 1 cup milk and stir just until all ingredients are combined. Pour the batter over the butter. DO NOT STIR.
- In a large saucepan, combine sliced peaches, 1 cup sugar, 1 teaspoon vanilla, 1 tablespoon fresh lemon juice, and 1 teaspoon ground cinnamon. Bring this mixture to a boil, stirring constantly. Pour the peach mixture evenly over the batter. DO NOT STIR *Note: One option for modifying this recipe to make it less sweet is to use 1/2 cup of sugar here. Also, the order is correct. Butter, batter, peaches. During baking, the batter rises above the peaches!
- Bake for 40-45 minutes, or until the top is golden brown.
- Cool slightly before serving.
