Beef and Broccoli
Um…I just realized that I hadn't eaten dinner at all this past week. When I say "dinner," I mean more than a handful or pretzels and dried mango. I guess when your husband is out of town, you can do that. What a crazy work week it was! Thankful it is the weekend! My husband is back home safe and sound. He walked in the house Thursday at midnight. I don’t know who was more excited to see him: me or the dogs. We were supposed to go on a date Friday night, but Eric and I looked at each other and decided we were eating PF Chang’s in bed while catching up on all 5 of our shows that started back this week (Chicago PD, Law & Order SVU, Grey’s Anatomy, Chicago Med and Chicago Fire). I am such a great wife that I recorded all of our shows and didn’t watch any of them while he was gone. I deserve a present! Actually, speaking of presents, Eric gave me a huge Crate and Barrel box Friday morning that had Olivia Pope wine glasses in it. I found out he drove an hour outside of Minneapolis to get these for me. The obsession with Scandal is serious ya'll, and I hate how I am pulling for the President and the mistress. Olivia and Fitz forever! So ready for Scandal to come back on... January is so far away!!
Last week Mallory, Tatum and I got together for dinner. Mallory is actually moving to Nashville, so last week we had dinner at her place for one last hoorah. Mallory accepted an awesome CPA job with a major health care company in Nashville. Sad to see her moving away, but I’m really proud of what she has accomplished. Can’t wait to go visit. I love Nashville and her!
I decided to cook Beef and Broccoli and was really impressed with this recipe. The only thing I would have change was to cut the meat a little thinner than I did. Flank Steak is already tough, so it was a bit chewy but had great flavor. I served it over brown rice. I did use all healthier ingredients (reduced sodium soy sauce, light brown sugar, 33% less sodium chicken stock, and extra light olive oil).
Ingredients
2/3 cup reduced sodium soy sauce
1/2 cup 33% less sodium chicken stock
1/4 cup honey
2 tablespoons rice wine vinegar
2 tablespoons light brown sugar, packed
1/3 minced garlic
1 tablespoon sesame oil
1 tablespoon cornstarch
1 teaspoon Sriracha (or more) to taste
1 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1 tablespoon extra light olive oil
1 pound flank steak, thinly sliced across the grain
1 head broccoli, cut into florets
Instructions
- Cook Uncle Ben's Brown Rice according to package
- In a medium bowl, whisk together soy sauce, chicken stock, honey, vinegar, brown sugar, garlic, sesame oil, cornstarch, Sriracha, ginger, red pepper flakes, and 1/4 cup water; set aside.
- Heat olive oil in a large skillet over medium high heat. Add steak and cook, flipping until browned for about 3-4 minutes. Stir in broccoli and soy sauce mixture until tender and slightly thickened for about 3-4 minutes.
- Serve immediately over brown rice.
