The Perfect Football Snack
Sorry I was MIA for a week! Eric and I ate out almost every
night last week, or we ate turkey and pepper jack paninis, Baked Cheetos, and
grapes so I didn’t think that was blog worthy ha ha…. No seriously, I told Eric
we were eating a 1st grader’s dinner and that some day when we have kids, they
will be thrilled for dinners like this!
I hope everyone had an awesome Labor Day weekend! I usually
go out of town and take advantage of my 3 days off, but I decided to stay close
to home and really enjoyed doing nothing!
Saturday was the start of college
football, and anyone that is from the South or anyone in the SEC Conference, I
should really say, knows there just isn’t anything like this time of year. We
watched football Thursday, Saturday, Sunday, and last night! The husband is an
avid football fan for both NFL and college, and I really enjoy it too. Saturday,
Eric had to work but was off in time to meet me at one of my best friend’s
houses in Chelsea. Thanking God for the sake of my marriage that Georgia won….
Ok he isn’t that bad, but he is really excited about Georgia’s team this year
because I decided to gift Eric with Kirby Smart! I also decided to gift him
Saturday with making cheese dip for the party. A lot of you know this recipe,
but for those of you that don’t, I thought I would share! When I usually make
this, I don’t put Jimmy Dean Sausage in it but I decided why not? Matthew and
the husband were licking the pot. I tried to make this as healthy as you can
make cheese dip (is that possible?). I bought 2% Velveeta instead of the
original, and I bought All Natural Jimmy Dean Sausage instead of the original
as well.
Ingredients
1 can (10 oz each) RoTel Original Diced Tomatoes & Green
Chilies, undrained
1 pkg (16 oz each) 2% Velveeta, cut into 1/2-inch cubes
1 pkg Jimmy Dean All Natural Sausage Roll
Instructions
- Cut cheese into 1 inch cubes. Place cheese in crock pot and melt on medium heat. When cheese is almost melted, add undrained RoTel tomatoes.
- In a medium sauté pan, brown sausage. Add the sausage to the cheese mixture, and then cover and simmer until thoroughly heated.
- Serve with Tostitos!
