Crock-Pot White Chicken Chili
Hope you had a great weekend! I know so many like this time of year, but I dread it. I hate cold weather but what I do love about this time of year is fuzzy socks, boots, and sweaters. This weekend it finally got chilly in Alabama, so I decided to make some White Chicken Chili on Sunday. Y’all, Eric was very vocal about how good this chili was, and I happened to agree. I think this is the best I have ever made. I invited my sister and her husband over, and we ate the whole dang crock-pot. Half way through the meal, the Tostitos Scoops came out and made it even better. This somewhat healthy chili now became unhealthy with the portion size and scoops I devoured, but who cares—it’s Thanksgiving week. I was somewhat sad when I realized this chili was all gone. I was really wanting left overs for lunch. I suspect I will be making this again very soon!
I didn’t really change anything with this recipe besides onions to onion powder, regular corn to low sodium corn, and half and half to fat free half and half.
Ingredients
1 lb boneless skinless chicken breasts
1 tbsp onion powder or 1 medium yellow onion diced
½ tsp of minced garlic
24 oz. low sodium chicken broth
2 15oz cans great Northern beans drained and rinsed
2 4oz cans diced green chilies (one hot, one mild)
1 15oz can low sodium whole kernel corn drained
1 tsp salt
1/2 tsp black pepper
1 tsp cumin
¾ tsp oregano
½ tsp chili powder
¼ tsp cayenne pepper
1 tsp of cilantro chopped
4 oz reduced fat cream cheese
¼ cup fat free half and half
Instructions
- Add chicken breasts to bottom of crock-pot, top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
- Then add onion, minced garlic, great Northern beans, green chilies, corn, chicken broth and cilantro. Stir.
- Cover and cook on LOW for 8 hours or on HIGH for 3-4 hours.
- Remove chicken to large mixing bowl, shred, then return to slow cooker.
- Add cream cheese and half and half, stir, and then cover and cook on HIGH for 15 minutes, or until chili is creamy and slightly thickened.
- Stir well and serve.
