Slow Cooker Meatball Sub

For those of you that follow me on Facebook and saw my post last night, I would like to go into more detail on this competition. I guess in normal households (meaning not in the Food and Beverage industry), you probably don’t see this a lot, so this was a new edition called, “Which Meatball Sub Looked Better?” I got so much joy watching Eric check his phone every five seconds when someone commented which sub they liked. Let me just make this clear…this was Eric’s idea! Let me also make it clear that I never win anything against him. I am naturally a very competitive person, but someone how I always lose. I asked him a couple weeks ago if he could help me on my presentation with food pictures for the blog. So last night I asked him, “Which way I should cut the bread?” From that moment on, this turned into a competition. Eric and I were disagreeing on how to slice the bread. Eric went with a “Subway” cut, and I went with a cut down the center of the bread. According to Facebook votes, mine looked better—Duh! Eric told me I sabotaged him because I burnt his sub. I responded quickly saying, “It is about the cut and since yours was tilted higher toward the broiler it burned.” Let’s be honest…they were on the same pan, and in the oven for the same time. So anyways, that was a fun game we played. Thanks to those that participated! Apparently, we are now going to do this with every meal. Do not worry we aren’t taking it to Facebook every time, but I think Eric is wanting a rematch quickly!

So now onto this Meatball Sub. All I have to say is Firehouse has nothing on this recipe. I have to say I have never had a meatball sub, so it was good to try something new. When Eric and I go to Firehouse, Eric usually gets the Meatball sub! This recipe is not healthy, but it’s delicious. This is also mostly done in the crock pot and so easy. The only thing I would say that the recipe doesn’t outline is to stir this occasionally. I had a few meatballs stick to the side! I also changed a few ingredients to make it “healthier.” I used fat-free Mozzarella, an organic brown egg, and light olive oil…I assure you that it did not make this recipe healthier!

Ingredients
1 ½ pounds ground chuck
1 egg, beaten
1 ¼ cups Progresso Italian seasoned bread crumbs
2 tablespoons chopped fresh parsley
3 tablespoons garlic, finely minced
1- 28ounce can Hunt’s crushed tomatoes with basil
1 small can Hunt’s tomato paste
¼ cup of light olive oil
2 teaspoons of salt (more to taste)
1 teaspoon of cracked pepper (more to taste)
1 package of Kraft shredded Fat-Free mozzarella
1 package of Kaiser Rolls

Instructions
In your slow cooker, combine paste, crushed tomatoes, olive oil, salt, pepper and 2 tablespoons of minced garlic.
In a large bowl, use your hands to mix together ground chuck, egg, bread crumbs, fresh parsley and 1 tablespoon of minced garlic. Combine well.
Divide the meat mixture into 20 meatballs.
Place the meatballs in the sauce mixture and cook on low for 4 to 6 hours.
Put about three meatballs on each sub and label some of the sauce over the meatballs.
Top with mozzarella cheese.
Broil for 3 minutes or until the cheese is completely melted.
Cool for a minute or two and ENJOY!
