Chewy Butterscotch Brownies
Happy Wednesday!! Is anyone else exhausted like me? I did not sleep good last night, and Eric was up at 3am this morning to leave for work. So after watching America’s Got Talent and the beginning of The Proposal (that movie makes me giggle), I finally fell back asleep. To say the least, I did not want to get up this morning. Does anyone else watch AGT? I swear I have cried three times this season already! I do have to say I am ready for the fall shows to be back on. Need some Grey’s, Scandal, and all the Chicago shows back on pronto!
So Sunday we celebrated Father’s Day with a Lupper (Late Lunch/Supper) at my parents’ house. I never know what to get my Dad each year, but I always know that if I cook him something, it’s just as good as a gift. I shared a picture of butterscotch brownies that I cooked for my Dad on my Instagram on Sunday and had a couple of people ask me for the recipe, so I thought I would share. I usually bake Butterscotch Cookies and I roll them into a ball to make a traditional round cookie, but I thought I would make them like his mom used to make them. My Grandmother JoJo, use to make them in a rectangle pan and cut them into squares. As I was just about to start making the cookies, I saw a recipe on the back of the butterscotch morsel bag for Chewy Butterscotch Brownies. I decided to switch it up and try something new. There wasn’t much difference in the recipes beside the brownies calling for all brown sugar and not granulated sugar like the traditional Butterscotch Cookies recipe does. I am so glad that I made them because my Dad loved them! Eric loved them too, but I told him he could have like three because they were for Father’s Day. He wasn’t very fond about that, oops!
I did not change anything about this recipe. I am not a big fan of nuts in my baked goods (I know, I’m not normal), so I did leave the nuts out of this recipe.
Lastly, Mack is going to be 14 weeks Thursday, and I found out after making these brownies that he can barely reach the top of the island. Eeek, I’m going to have to watch my back now. He wanted those butterscotch brownies so bad.
Ingredients
2 ½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
1 cup (2 sticks) butter-softened
1 ¾ packed brown sugar
1 Tbls vanilla extract
2 large eggs
1 2/3 Nestle Toll House Butterscotch Flavored Morsels, divided
1 cup chopped nuts (optional)
Instructions
- Preheat oven to 350° F.
- Combine flour, baking powder, and salt in a medium bowl. Beat butter, sugar, and vanilla extract in a large mixing bowl until creamy. Beat in eggs. Gradually beat in flour mixture. Stir in 1 cup morsels and nuts. Spread into ungreased 13x9-inch baking pan. Sprinkle with remaining morsels.
- Bake for 30 to 40 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack.
