Whole 30- Day 2- Bacon Wrapped Chicken + Jalapeno Bites
We survived day 2
of the Whole 30! Ladies and gentleman, we are still alive! Ha! Kidding, it
isn’t that bad! Eric and I both did better yesterday. I felt we were a little
more prepared. I honestly have to say it’s hard to get prepared for this
because you kind of have to listen to your body and play mind games with it
after day one. I swear I’m not crazy, and it’s true! You have to know, “Ok I’m
bored, and I’m really not hungry,” “Should I eat some fruit with dinner to
fight this sweet tooth craving?”, etc.
Yesterday a friend
of mine sent me a spreadsheet, and I ended up going to Whole Foods and picking
up a couple of things she recommended. Two of the things I got were Organic
Ketchup and Organic Creamy Ranch. The brand is Tessemae’s, and it is Whole 30
approved and has the logo on the back so it makes it very easy to run into the
store and grab. I am very interested to see how these are. I am making burgers
(no bun) and homemade fries one night for dinner soon and excited to try it on
both my burger and fries.
I also have been
doing some research on lunch options, and while I was at Whole Foods, I
purchased some organic turkey (Eric loves it) and pepperoni. Most of the lunch
meat that is prepackaged isn’t Whole 30 approved, but if you get it from the
deli, you can find a couple of brands that are. This was a big win. Eric
went home yesterday and today for lunch, and he made turkey and pepperoni
rolls. He is also eating a lot of hard boiled eggs! Yay for protein!
Last night for
dinner, I fixed Bacon Wrapped Chicken + Jalapeño Bites. YUM! Eric gave me a
high five and was satisfyingly full after dinner. I made a small fruit salad
(We were wanting something sweet—I’m trying to be careful with fruit, They say
you should eat fruit with a meal, not just as a snack) and red potatoes with
avocado oil, salt, pepper, and garlic powder! I had left overs for lunch today,
and we still have a couple in the fridge. They are so simple to make and
delicious.
Ingredients
2
boneless, skinless chicken breast
1 package
of Whole 30 approved bacon
1
jalapeno, sliced thin
1 tsp
garlic powder
¼ tsp
black pepper
1 baking
sheet with parchment paper
Toothpicks
Instructions
Cut chicken into
bite sized pieces. Place in a bowl and toss with garlic powder and black
pepper, toss to coat evenly.
Cut bacon into halves.
Place
jalapeno on top of a piece of chicken and wrap with bacon tightly. Secure with
a toothpick.
Place on
top of the parchment paper covered baking sheet.
Bake at 350 for
35-45 minutes.
Remove
from oven and let cool on top of some paper towels to soak up the extra grease.
